Introduction
Vitamin C also known as ascorbic acid, is one of the most important vitamins required by the metabolic processes in different organs of the body. It is usually processed internally by the living organisms especially by the mammals. Due to being one of the anti-oxidants, it protects the body against oxidative stress and also is a co-factor in many enzymatic reactions. Deficiency in Vitamin C can lead to several diseases such as Heart Diseases (CHD) and Scurvy. It is really good in helping to repair any damage on the body and also its supplementation reduces the frequency of the common cold quite significantly. Hence, as pointed out by the facts mentioned above it is clear that Vitamin C is essential for living organisms, especially humans. Therefore the higher the intake in Vitamin C concentrations the better it is for the body. In this experiment we will try to find out the concentration of Vitamin in Fruit Juices and in Fresh Fruits and see if we can spot any differences.
Hypothesis
For this experiment, to investigate and compare the differences in the concentrations of Fresh fruit Vitamin C content to the concentration in Fruit Juices, I predict that the fresh fruit would contain a higher amount of Vitamin C than the Fruit Juices. As Vitamin C can be oxidised quite easily, the fruit juices will hold less Vitamin C due to being in contact with oxygen longer than the fresh fruits. Therefore, the fresh fruits will have a higher Vitamin C content in comparison to Fruit juices. Moreover, as the juices are processed and other additional ingredients are added to them may lead to reducing the Vitamin C content. Most food companies declare the Vitamin C content before the final production of the fruit juices on the cartons, hence; the older the juice, the less vitamin C it contains. As the fresh fruits are going to be natural without any additives, the vitamin C content will be high in comparison to the un-natural man-made fruit juices with additives.

There are a lot of risks I must be aware of during my practical and the precautions that should be taken are:
Safety Glasses must be worn at all times so that our eyes are protected.
Knives are used carefully when slicing the fruits, as they are very sharp and can cut through skin. Also as other students will be working around the lab we need to be aware of staying clear from them.
